Ingredients
3 cups all-purpose flour
1 tablespoon of baking powder
1 tablespoon of baking soda
1 tablespoon of cinnamon
1 teaspoon of salt
11/2 cups (three sticks) of butter, at room temperature
11/2 cups granulated sugar
11/2 cups of light-brown sugar
3 eggs
1 tablespoon of vanilla
3 cups of chocolate chips
3 cups of old-fashion rolled oats
2 cups of flaked coconut
2 cups of chopped pecans
Instructions
Heat the oven to 350 degrees. Mix the flour, baking powder, baking soda, cinnamon and salt in a medium-mixing bowl.
In an 8-quart bowl, beat the butter on medium speed till smooth and creamy, 1 minute. Gradually beat in th sugars; beat to combine, 2 minute. Add eggs, one at a time, beating after each one. Beat in the vanilla. Stir ir the flour mixture until just combined. Add the chocolate chips, oats, coconut and pecans.
For each cookie, drop ¼ cup of dough onto an ungreased baking sheets, spacing three inches apart.
Bake for 17 to 20 minutes until the edges are lightly browned; rotate sheets halfway through baking time.
Remove cookies to a rack to cool. Makes three dozen.
For 6 dozen smaller cookies, use 2 tablespoons of dough for each cookie. Bake at 350 degrees for 15 to 18 minutes.
